California desert landscape at golden hour

About Wishbones

Rooted in the California Desert. Built on Purpose.

We raise ostriches with care, intention, and a deep respect for what this extraordinary animal offers the world.

Our Mission

A New Standard for Sustainable Agriculture

Wishbones Ostrich Farm was founded on a simple but powerful belief: that the ostrich is one of the most underutilized animals in modern agriculture — and that California was the perfect place to change that.

Our mission is to raise ostriches with the highest standards of care, produce premium products that reflect the animal's extraordinary value, and educate the world about what sustainable, whole-bird farming can look like.

Every decision we make — from how we feed our birds to how we package our products — is guided by a commitment to quality, transparency, and long-term sustainability.

The Founder's Story

Rooted in Passion. Built on Purpose.

The story of Wishbones begins in Africa. In 2016, a six-week journey through the continent sparked a fascination that would prove impossible to set aside — an encounter with ostriches that revealed just how extraordinary these animals truly are, and how little the world understood them.

That trip ignited years of research: studying commercial ostrich production, connecting with experienced producers across South Africa, Australia, and the American Southwest, and developing a clear vision for what a California operation could become. The question was never whether to pursue it — only how to do it right.

What emerged from that journey was a vision for a California farm that didn't just raise ostriches — it celebrated them. A farm that would produce world-class products, welcome curious visitors, and become a resource for anyone who wanted to learn.

Wishbones Ostrich Farm is the result of that vision. We're proud to be building something new — and we're just getting started.

Our Values

What We Stand For

Whole-Bird Sustainability

We believe in using every part of the ostrich — from meat to leather, feathers to eggshells — because waste is not an option when you're farming with purpose.

Uncompromising Quality

Every product that leaves Wishbones meets a standard we'd be proud to put our name on. We don't cut corners on feed, care, processing, or packaging.

Radical Transparency

We believe you should know exactly where your food and products come from. We welcome questions, visitors, and scrutiny — because we have nothing to hide.

Education & Community

Ostrich agriculture is still largely unknown in the United States. We see it as our responsibility to change that — through farm tours, resources, and open conversation.

Long-Term Thinking

Our commitment to this land, these animals, and the community we're building is measured in decades — not quarters.

California Innovation

We're proud to be a California farm — and we bring a California spirit to everything we do: curious, forward-thinking, and unafraid to do things differently.

Why Ostrich

The Case for the World's Most Underrated Animal

Most people have never tasted ostrich meat, held an ostrich egg, or touched ostrich leather. That's exactly the problem we're here to solve.

97%

Fat-Free Protein

Ostrich meat is classified as a red meat but has the fat content of white meat — making it one of the healthiest proteins available.

Non-Mammalian

Unique Red Meat

Ostrich is the only red meat that comes from a non-mammalian source — a meaningful distinction for those with mammalian protein sensitivities.

2 kg+

Largest Egg

A single ostrich egg weighs over two kilograms — equivalent to roughly 24 chicken eggs — making it the world's largest egg and a remarkable culinary ingredient.

8+

Premium By-Products

Leather, feathers, oil, eggs, eggshells, pet treats, and pharmaceutical compounds — the ostrich yields more premium products per animal than almost any other species.
